Cold, rainy days are so selfish when it comes to soup. Where is it written that you have to be freezing and miserable to enjoy a nice meal in a bowl? Certainly not in this blog, that much we know.
We have a message for the summer soup naysayers: Expand your mind and palate, and try these soups with our organic crackers for dinner tonight. Your stomach will thank you for it.
1. Chilled Cucumber Soup
If you fear the blazing heat of your stove come mid-July, then this is the soup recipe for you. Load peeled cucumbers, silken tofu, fresh cilantro, white wine vinegar, and vegetable broth into a blender. Blend until smooth and frothy. These flavors need time to develop, so refrigerate for two hours prior to eating. Serve cold in chilled soup bowls, topped with pico de gallo, and crackers on the side for that much-needed crunch. Feed that need with our all-new Mariner Biscuit Organic Saltines, or our crowd-favorite Bite Size Stoned Wheats. If the soup feels too cold, just remember, chattering teeth is nature’s way of helping you eat crackers.
2. Ginger and Turmeric-Spiced Spring Carrot Soup
This orange bowl of goodness can be served hot or cold, so it’s perfect for those unholy blazers of a day or if there is a slight summer chill. Chopped carrots, ginger, grated turmeric root, ground cinnamon, and a pinch of red pepper are blitzed into a vibrant, silky, spiced soup that has just a hint of heat to it. You know what they say: if you can’t take the heat, then you’ve added too many red pepper flakes. Add more yogurt to your soup and our CaPeachio’s Original Water Crackers on the side to tame the flames and perfect your dish.
3. Summer Vegetable Chowder
As a cracker company born and raised on the Massachusetts coastline, we are always down for any kind of chowder anytime, anywhere. Summertime means fresh veggies, so we’ll neglect the clams (we still adore you, clams) for this delicious chowder recipe that features sweet corn and zucchini. The recipe comes with many variations, including adding some spice with Serrano Peppers, or adding bacon because you love bacon. Stir in fresh basil pesto, top with parmesan cheese, and dip in our Mariner Biscuit Sea Salt Multigrain Organic Flatbreads for the ultimate warm-weather chowder experience.
4. Summer Minestrone Soup
Referred to as “summer in a bowl,” minestrone soup is light, bright, and benefits from some slight improvisation. Everything an ideal summer should be. While these directions call for zucchini, leeks, celery, red bell pepper, green beans, and tomatoes, you can substitute, add, or remove veggies and still have a hit. Broth thickness is entirely preferential, along with pasta type. You know that indescribable and unrelenting food craving some experience deep in the night? That feeling comes from eating this soup with any cracker other than our CaPeachio’s Natural Butter crackers. Venus Wafers, solving food mysteries since 1931.
